Watermelon, Feta and Mint Salad
Ingredients
- 300 grams Green Beans trimmed
- 1 Mini Watermelon (rind removed and
- flesh cubed)
- 100 grame Rocket
- 100 grams Baby Spinach
- 200 grams Feta Cheese crumbled
- 10 grams Mint Leaves
- 1/4 cup Extra Virgin Olive Oil
- 2 tbsps Apple Cider Vinegar
- 1 tsp Chilli Flakes to taste
- Sea Salt & Black Pepper to taste
- 50 grams Pickled Red Onions
Instructions
- Cook the green beans in boiling water for 3-4 minutes. They should still have some bite. Tip into a colander, refresh under cold water and drain.
- In a small bowl, mix together the olive oil, vinegar, chilli flakes, salt & pepper. Set aside.
- In a big serving bowl, add the rocket, baby spinach, watermelon, green beans, feta cheese and red onion, and combine well. Add the vinaigrette and toss. Adjust seasoning if necessary and garnish with the fresh mint.
